The Intermediate level includes everything in the Foundation level (which you can read HERE) but expands much further in both knowledge and skills. You will learn how to calibrate a coffee grinder (dial in), how to create multiple beverage orders quickly and efficiently through effective workflow procedures, plus so much more.

Introducing the Espresso Brew Formula/Ratio

This course also introduces coffee refractometry and how to identify under/over extraction using precise scientific measures. This will enable you to navigate through the calibration process even easier and optimise your espresso.

Learn how to identify extraction levels and calibrate well balanced Espresso

You will also learn more advanced Latte Art by gaining insight into the methodology behind it, as well as additional practice time to implement the knowledge and develop quality skills. The course also covers product info in detail about milk and plant based milks so you know how to work with all of them and get the best results.

You will further develop your sensory comprehension - your ability to identify and describe the taste, textures, and flavours of coffee. And much much more!

  • Describe the main differences between Arabica and Robusta

  • describe how to store and use coffee correctly to preserve freshness

  • list the components and functions of an espresso machine and grinder

  • follow a recipe, using correct brewing routine, to prepare espresso according to SCA’s standards

  • describe the sensory process and identify key sensations

  • maintain clean equipment through barista service

  • steam and texture milk to achieve glossy microfoam

  • create all the beverages from a café menu according to their standards

  • adjust the grind size/texture and maintain a consistent brew time

  • pour a basic Latte Art pattern (Heart)

  • clean an espresso machine and grinder effectively

  • follow efficient workflow practices

  • describe best practices for customer service

  • calibrate / dial in espresso extraction to SCA standards

  • identify under/over-extraction through the sensory process

  • use a refractometer to measure total dissolved solids and calculate extraction %

After completing this course learners receive an SCA Intermediate Barista certificate and 10 points towards the Coffee Skills Diploma

PART 1: Online video lectures with Tristan (4 hours) / When: issued a week before practical (and must be watched before practical begins)

PART 2: Practical activities with Blue (12 hours) / When: Wednesday 1:30pm to 5:30pm & Thursday 9am to 5pm

PART 3: 1 on1 live online session with Tristan (1 hour) / When: scheduled at your convenience after practical

Assessment

COURSE EXAMS

Practical Exam: completed at the end of the practical activities (on the 2nd day).

Written (theory) Exam: multiple choice test (online) with a 70% pass rate (25 correct answers out of 35 questions), to be completed within 21 days of completing the practical activities.

FAQ

Q: What is the difference between SCA accreditation and TAFE?

A: SCA standards are significantly higher and more relevant to Specialty Coffee than TAFE Australia standards. Passing the exams requires superior skills and more detailed product knowledge (that’s specific to the Specialty Coffee). SCA is also the only internationally recognised certification system for a Barista.

Q: Do I need to bring anything to the class?

A: You are welcome to a bring pen and paper if you like to write your own notes but everything you need for the course will be provided, including a PDF handout with all the course content.

Q: Can I arrive and pay on the date?

A: Unfortunately not, we need to plan accurately for each class and require pre-payment. Registration generally closes 48 hours before the course begins.

Q: I’ve seen courses that run for 2-3 hours, why is this course 2 days?

A: Consistently good Specialty Coffee requires a high level of attention to detail, and learning hands on skills requires an appropriate amount of time, with proper guidance, in order to develop quality skills. Plus in our course you will learn so much more detailed product knowledge about coffee!
